Vegan cheese danish pastryWhen I became vegan, I knew that I was giving up some of my favorite foods, one of them is the beloved cheese danish. My Dad used to buy these on Fridays. My brother and I ate them one after the other. I thought that I’d never taste this pastry again but I found a vegan way to still enjoy an amazing danish with no regrets! (well…except for the calories)

I ran into a recipe in Hebrew for "Vegan Cheese Danish" and had to try. I used my own recipe for the cheese, because I preferred not to use Soy milk.  Preparation - is not difficult at all BUT best to do it while doing other things, as you have to wait for the dough to grow and soak nuts....

Preparations
  1. Almonds - better to get blanched almonds, otherwise - after soaking the almonds, blanch in boiling water for 1-2 minutes, wash with cold water and easily peel the shells.
  2. Apple Puree- whenever I need to use Apple puree I make it myself, it is healthier, fresher and cheaper. Just peel the 4 apples, cut them roughly and remove the core. cook with a bit of water for 10-15 minutes until soft and mash using a blender.
Danish Dough
  1. Combine the dry ingredients and mix well.
  2. Add the wet ingredients and keep kneading until the dough is a soft ball, and not sticky (if it is - add 2 flour tbsp at a time)
  3. cover with a towel and place somewhere warm (not over 30 degrees C) until the dough has doubled - about 1.5-2 hours, if you need to wait longer, put in the fridge to slow the process.
Sweet Cheese
  1. Once we finished the preparation for this cheese- the rest is a piece of cake 🙂 - use a good blender/food-processor and put the almonds and cashew with 1/2-1 cup water. try adding the water gradually, it should be enough just to grind them into a thick and very very smooth paste. your blender would probably need 5-10 minutes to finish this task.
  2. Add in the Apple puree, sugar powder, Vanilla, and lemon zest. taste 🙂
Making Danishes
  1. Divide the dough into 2-3 smaller balls. lightly flour the work surface and rolling pin. flatten the dough until it is about 4 mm thick.
  2. cut into 5x5 cm squares. place 1 tsp cheese in the center, take two opposite corners of the square and gently connect them. put all the danishes on a wide baking pan (covered with baking paper).
  3. Bake at 170 degrees C for 15 minutes until the danishes are golden brown.
Recipe Notes

A variation to the filling- Apple Puree with Sugar powder, Lemon Zest, Vanilla and Sultanas. My spouse actually liked these better. I preferred the cheese 🙂

It is still very tasty when freezing and re-heating.
