Tempeh Sinya – Baked Tempeh, Tomatoes and Tahini

Sinya is usually made with Lamb and Baked Tahini, this excellentย version is a great reminder of how vegan food can be most satisfying and tasty. This was actually the first dish that my boyfriend ever cooked for me ๐Ÿ™‚ and we’re still together so he obviously did a good job!

Best served with Mujaddara

Tahini sauce

Instructions
  1. Fry the pine nuts (they don't need oil because they are already oily) until golden brown. keep aside.
  2. In a deep pan, fry the onion in olive oil for 5 minutes. add the Tempeh cubes, garlic, ginger, cumin and Tumeric. keep cooking for several minutes to make the Tempeh crispier.
  3. Add the pine nuts, stir well, and layer in a deep baking dish. Add the tomatoes as a second layer
  4. mix together all the Tahini sauce ingredients and pour on the tomatoes evenly.
  5. Bake at 180 degrees C for 20 minutes, until the Tahini is baked into a thick glaze.
