Tahini and peanut butter cookies

I never liked Tahini cookies or Halva, whenever I tried  them it was nice at first but the Tahini felt out of place, so I was hoping (to save some calories) that when I make these cookies I would feel the same way and let other people enjoy these cookies but something changed – it’s either the fact that I eat much more Tahini as a vegan or just because this recipe is good…. but too bad, the cookies are really tasty.

I didn’t have enough Tahini so I replaced half of the quantity with Peanut butter. what a great decision!  but you could, of course, use only Tahini or only Peanut butter (160 grams)

Instructions
  1. In a big bowl - mix together all the dry ingredients. add the oils and stir well. Finally, Stir in the Tahini and peanut butter. if the dough is too crumbling, add up to 20 ml water.
  2. Make cookie balls (from about 1 full tbsp of dough). arrange on a baking paper with some distance to allow growth.
  3. this is the fun part - you can try making shapes with the dough using a fork. I tried a few different ones...
  4. Bake at 180 degrees C for 15 minutes. when the cooking are golden brown, remove from the oven for a full cool down, they might break when still hot.
