Summer fruits Crostata

I LOVE the summer because I love summer fruits. I could live on Summer fruits. That’s why this cake is so perfect – it mostly focuses on your favorite summer fruits (in a wrap :)).

I veganized this recipe and it was quite easy to make, you don’t even need a cake pan for it.

*Feel free to change the fruit blend to your liking…

*This cake is not so big, if you’re making it for a special event – consider doubling the quantities.

Instructions
  1. Combine the flour, date honey, salt and oils together, knead VERY briefly. add 1-2 tbsp ice water. If this dough is over kneaded - it will become too hard. just do the minimum to join all the ingredients to a ball. Cover with a plastic wrap and keep in the fridge for one hour.
  2. In a bowl - mix together the fruits, sugar and flour.
  3. Use a floured flat surface to flatten the dough into a big circle (about 3-4 mm thick). We did it on a flat baking pan covered with baking paper.
  4. put the fruits in the center of the circle, keeping a 3 cm margin of an "empty" outer circle. fold this dough towards the fruits, and by doing so - create a dough barrier to prevent the fruits from falling out.
  5. Bake at 180 degrees C for 25 minutes. in our case- it was 5 minutes too much, so check your cake to make sure that the dough is golden brown. Haha, it still tasted amazing 🙂
