Spiced Pumpkin Oats Cookies

I decided to make cookies for class and had only one hour, I opened the fridge and saw the Pumpkin and realized that it would just taste perfect with oats and some spices.

I haven’t done many vegan experiments with Pumpkin in sweets but the result was very satisfactory it and will definitely be used in other desserts from now on.

I was short on time so I just spread the cookie dough on the baking pan and cut into squares when it was ready. You can definitely shape them differently if you prefer the traditional cookie shape.

Ingredients

Instructions
  1. Cook the pumpkin and apple with cloves and ginger in water for 15-20 minutes until they are soft. Strain and use a hand blender to puree.
  2. Combine the rest of the ingredients in a large bowl and stir well. add the puree when ready.
  3. Shape the cookies to your preference. I was short on time so I just spread in on a pan and cut into squares.
  4. Bake at 180 degrees C (350 F) for 20-25 minutes until golden brown.
