Saj Bread

Saj Bread is a Pita bread cooked on an iron pot. it can be placed over a fire or on your stove. Since most of us don’t own a Saj- use a wok and your highest flame (but don’t let the fire touch the Wok/Saj).

Making this bread is fun and simple. you can make it with friends or children, it’s a great upgrade for any event (I just had it for lunch today. Try having it with some Hummus 🙂

Ingredients

Instructions
  1. mix the flours, yeast and salt. add water and keep kneading for 5-6 minutes, knead with your hands for 2-3 minutes.
  2. divide the dough into 12 smaller balls, brush the dough balls lightly with olive oil and cover for 0.5-1 hours (depending on the room temperature - you could also put in the oven on 35 degrees C)
  3. Warm up the Saj-Wok, when it's hot enough pour a bit of olive oil. straighten the dough as much as possible using your fingers (more traditional) or rolling pin (which I used when my fingers got tired).
  4. Put one bread at a time on the Saj-wok, wait until bubbles form in the dough and flip it. when you take it of brush one side with an olive oil-garlic mixture and add some Hyssop. Bon Appetite!
