Quick Gluten Free Vegan Pancakes

People always speak about white flour and sugar and how bad they are for you. so lately I’ve been avoiding wheat flour and sugar as an experiment.

Frankly, I don’t feel ANY difference, but I have come to realize how dependent I am in flour – it’s EVERYWHERE. Bread, Cornflakes, Pasta, Pizza, Cookies, Pastries even Tortillas. I really think that this experiment will not last much longer… Gluten Free is hard. However, it did help me think more creatively – when planning what to cook.

After several weeks of this hard diet (vegan, gluten free and sugar free. man! I’m tough) I began to miss a proper Pancake breakfast and developed a serious craving for something that resembles dough. I read online and made some trials, today I had a breakthrough and combined a great Gluten Free – Sugar Free – Egg Free – Dairy Free Pancake Recipe. how wonderful! It’s even TASTY & super easy to make- what else can a girl ask for in a perfect breakfast? 🙂

I asked my boyfriend if he preferred our wheat flour version for pancakes rather than this gluten free one – he just said “Both are good, as long as you’re cooking them and not me” (I didn’t correct him, usually he’s the one with pancake cravings and he’s the one making them…haha)

Debating what to put on these pancakes?  Here are some ideas: whipped coconut cream, 100% maple syrup, a fruit salad, apple puree, chocolate syrup, peanut butter, jam, vegan yogurt, chocolate flakes, passion fruit, pomegranate syrup, date syrup, fresh berries!

  1. In a large bowl, sift together the flours and baking powder

  2. pour in the milks, vanilla extract, sweetener, and water. mix until smooth. add the sultanas.

  3. Heat a lightly oiled pancake skillet over medium high heat. Pour about 1/4 cup of the batter onto the skillet. bubbles will start to form on the surface of the pancake, it's almost time to flip them over.

  4. Wait until the batter is not liquid anymore and flip over on the other side, give it another 20-30 seconds to cook and serve.
