A Perfect Tomato spread (that goes with everything)

This tomato spread has been one of my favorite things as a student with limited time and resources. we never had enough food in the fridge because everyone was too busy studying.

so I used to buy second grade tomatoes and make this spread that simply goes with everything, but I like most on a good slice of sourdough bread with Tahini or cashew paste. The best thing about it – the preparation time takes about 15 minutes, just to chop everything quickly…

Ingredients

Instructions
  1. saute the onion in olive oil until softer. add the garlic and keep cooking for 2-3 minutes
  2. Add the tomatoes, chili and a pinch of black pepper (thyme or dried basil- optional). Cook over low heat for at least 1.5-2 hours.
  3. Check every 20-30 minutes and if needed, add 0.5 litters of water.
  4. This tomato spread becomes perfect when cooked for a long time. I simply stay around and check every now and then. I know that it's ready when it's sweet and moist. if still sour after a while, just add 1 tsp of sugar.
  5. add the fresh basil and keep in a jar.
