Oatmeal Cookies with Coconut & Cranberries

I wanted to make oatmeal cookies for weeks but wasn’t sure which recipe to choose. I eventually came up with my own recipe that I liked – a good mixture of my favorite ingredients. Usually oatmeal cookies are more dense, this recipe is quite different, the cookies are more puffy and I cut them in squares.

As the cookies are also a great nutritious snack, I often have them for breakfast.

They are also very quick and easy, I used my recipe several times since writing this post and I can’t get enough of them.  I hope you would like it too.

Ingredients

Instructions
  1. Mix the dry ingredients first, and in a separate bowl mix the wet ingredients. combine everything.
  2. Flatten in a baking pan (on a baking paper) - make sure that the cookie dough is at least 1 cm thick, shape the dough to be tighter. bake at 170 degrees C for 20 minutes.
  3. When taking out of the oven, cut into squares and let the cookies cool down.
  4. Keep in a jar 🙂
