Healthy Pancakes (for a Sinful Breakfast)

When I became vegan I thought to myself – am I really giving up pancakes?? But I quickly discovered that this was not going to be a problem and I’m actually eating more pancakes now than I did as a vegetarian….

I’m sure that most of us have our own way of eating pancakes. my boyfriend would be happy with a lot of maple syrup, while I like the diversity and I must have it with fruits.

Here are my favorite toppings ideas that you could use:

  • Coconut whipped cream
  • Apple puree or apple compote (the one in the picture was just – apples, cinnamon, clove and vanilla extract).
  • Maple Syrup
  • Homemade Chocolate syrup
  • Date honey
  • Jams – You can see in the picture – Mulberry Jam (recipe) and Strawberry Jam
  • Lemon curd (here is a recipe for a vegan version)
  • Almond Spread
  • Vegan Nutella spread
  • Fruit Salad
  • Mango
  • Banana
  • Berries
  • Cherries

Instructions
  1. Mix together the dry ingredients in a big bowl.
  2. Combine the wet ingredients as well and stir well.
  3. Pour the wet mixture into the bowl and whisk until the batter reaches a perfect smooth texture.
  4. Use a crepe pan or otherwise a wide non-stick pan (Teflon with no scratches). put over medium heat and wait until the pan is hot - put your palm above it to check if you feel the heat. spread some oil on the pan using a paper towel.
  5. use a soup serving spoon to measure and fill up half a spoon with batter. pour on the pan and immediately move the pan in circular motion to swirl the batter.
  6. if the pan was hot enough, the batter will start cooking very quickly, you will see tiny small bubbles pushing up the pancake. This is your cue to use a spatula and flip in other the other side for two more minutes.
  7. Pile them all up and have your sinful breakfast!
