Fresh Spring Rolls with Cucumber, Avocado & Carrot

I felt bad for eating so many Burekas yesterday so I made a healthy dinner this time. I make these delicious rolls quite often because they take about 15 minutes to make and are so refreshing and yummy… I dip the rolls in two sauces – soy sauce with sesame oil and peanut sauce. these rolls are just perfect for entertaining, I made them once for a birthday party and everyone loved them. *With this recipe everything has to be fresh when served, the fresh rolls have a tendency to dry quickly and will not be tasty a day later.

Ingredients
Spring rolls
Soy sauce
Peanut sauce

Instructions
  1. Cut the vegetables into little sticks - the best way is to slice them thinly and then cut each layer into sticks
  2. choose a bowl large enough to fit in the rice wrapper. fill with relatively hot water (but cold enough to put your hand inside) and put one rice wrapper inside, once its soft (10-15 seconds), take out of the water.
  3. Roll the wrapper - place veggies on the top center of the wrapper, fold the sides first and start rolling from the top to bottom.
  4. Make the sauces. mix the ingredients well.
