Start by cooking the beans for a while in water. beans take forever to cook, so cook for about 30-60 minutes while preparing the rest.
Drain the soy flakes over a strainer and squeeze lightly with a fork to let more water come out.
Fry the onion in olive oil for 3-4 minutes. add in the carrots and pepper and stir well for 2 more minutes.
Add the chili, bay leaves, thyme, coriander seeds, nutmeg, garlic and soy flakes. cook for a few more minutes.
Now we can add the tomatoes, black beans and salt & pepper. stir well. After 2-3 minutes add 2 cups water, bring to a boil and afterwards lower the heat. cook covered for 1-1.5 hours until the beans are softer.
you can stop at this stage and just serve with rice.
This is easy – cut the avocados and mash them with a fork. combine with the rest of the ingredients (careful with the lemon – it would be better to add it gradually)

Making a Burrito
Warm up a non stick pan. when hot, put a tortilla on it (without oil) for 10-15 seconds for each side.
Put the tortilla on a cutting board and start arranging the filling in the center – Cashew cream cheese, Chili con carne, rice, tomato salad and Guacamole
grab the top end and fold towards the lower end of the tortilla (the one closer to you), while gently pushing the filling back to make the wrap tighter.
Fold one of the sides inwards
and roll the Burrito from the lower end. since this explanation is not very clear – you can see the link that I added above with a proper video that I liked.
