I asked for Kidney beans but instead got these red and white beans (I think they are called pinto beans or cranberry beans not sure). I made a really nice dinner with these- after the beans cooked for 1.5-2 hours, it really didn’t take more than 25 minutes to cut the vegetables and cook. We had it with Couscous and it was a perfect match.
Of course – you do need to soak the beans for 12-24 hours in plenty of water, wash well and change the water 2-3 times if possible.
Beans - wash the beans well after soaking, cook for 1.5-2 hours until the beans have soften. remove the foam the forms above the water.
Fry the onion in olive oil for 5 minutes, add the garlic for another 2 minutes.
Add the eggplants, stir well. if needed add just a bit of water (but don't soak the vegetables). after several minutes add the beans and sweet potato and shortly after - tomatoes and thyme. cook for 10 minutes.
Add the Chard and mustard, cook for 5 more minutes or until the chard stems are softer. just before serving - add Basil.
